Chocolate and Hazelnut Gateau – Cake Recipe

Ingredients

  • Five eggs separated
  • 300 g caster sugar
  • One tablespoon cornflour
  • 125 g blanched hazelnuts, toasted and finely ground
  • Cocoa powder, for dusting
For the filing
  • 250 g plain dark chocolate, broken into pieces
  • 200 ml double cream
For the chocolate hazelnuts
  • 50 g hazelnuts
  • 50 g plain dark chocolate, melted

Preparation:

  1. Whisk the egg white in a large clean bowl until stiff, whisk in the sugar, a tablespoonful at a time, until it has all been added, whisk again until the meringue mixture is thick and glossy, fold in the cornflour and ground hazelnuts then spoon the mixture into a large piping bag fitted with 1 cm plain piping tube.
  2. Draw a 23 cm circle on three sheets of non-stick baking paper, starting in the centre of each prepared circle, pipe the mixture in a continuous coil, finishing just within the outer line.
  3. Bake all 3 in a preheated oven, 1500C, set timer for 1-11/4 hours until lightly golden and dried out, remove from the oven and transfer to a wire rack to cool completely.
  4. Heat the chocolate and cream in a heatproof set over a saucepan of simmering water, stirring until the chocolate has melted, remove from the heat and leave to cool then chill for 1 hour until thickened
  5. Make the chocolate hazelnuts, using a fork, dip the hazelnuts into the melted chocolate until coated, leave to set on a baking paper
  6. Beat the chocolate filling until light and fluffy and use it to sandwich the three meringue layers together, decorate with chocolate hazelnuts and serve dusted with cocoa powder.
