Coffee – Ice Cream Recipe

Ingredients:

  • Almond Milk 250 ml
  • Fatty Cream 350 ml
  • Erythritol 50 g
  • Coconut Oil 1 tablespoon.
  • Xanthan Gum 1/4 teaspoon.
  • Instant Coffee 2 tablespoons.

Preparation:

  1. Mix almond milk and 250 ml of cream in a saucepan over medium heat.
  2. Bring to a boil, then reduce the heat and simmer, often stirring, until the mixture is reduced by half – about an hour.
  3. Remove the mixture from the heat, add erythritol and coconut oil, mix thoroughly.
  4. Then add xanthan gum, coffee, and vanilla. Stir.
  5. Cool the mixture to room temperature.
  6. Beat the remaining cream until hard peaks and add to the cooled mixture.
  7. Stir and place in the freezer for a couple of hours.
  8. Let the ice cream stand at room temperature for 10 minutes before Portion.

Nutritional Benefits

  • Oat milk is high in natural fibre and iron and low in fat. Oats are also said to have properties within them that help with clearer skin by improving the Nutrition of it.
