Mini Cheesecake – Lunch Recipe

  • Cream Cheese 150 g
  • Butter 50 g
  • Erythritol 3 tablespoons.
  • Vanilla Extract to taste
  • Coconut Oil 180 ml
  • Cocoa Powder 1 tablespoon.

  1. Melt the butter in the microwave or a water bath and mix it with the cream cheese in a bowl using a mixer until smooth.
  2. Add 60 g of melted coconut oil, one tablespoon of erythritol, and vanilla. Mix thoroughly.
  3. Spread the mixture into 12 moulds and refrigerate for 20 minutes.
  4. Mix 120 g. of melted coconut oil, cocoa and 2tablespoons of erythritol.
  5. Take the cheesecakes out of the refrigerator, pour the remaining mixture, and put back into the fridge for at least 4 hours.
